Is there any reason why Viltrumites have to assimilate the dominant species on any planet? Wouldn't it be easier to go for the second most intelligent ones, like dolphins or chimpanzees?

Too time consuming. Viltrumites may live a long time but nobody got time to steer a species into your subservient little buddy.
