I don’t know if someone has already said this, but I think Vincent exists to emphasize that PC would rather be in a relationship with anyone resembling a stable masculine figure than continuing in her relationship with BoJack. But even tho, I don’t know why everyone acts like he’s not three little kids on top of each other in a trench coat.
