I assume he hooked up with other women during their entire relationship. Yohan’s relationship with Daniele is entirely mercenary on both their sides and I don’t think either of them ever made a sincere commitment.
From a story telling standpoint it adds some spice and drama to the scene. It’s especially important since a lot of these scenes are pretty repetitive – someone having an argument about money over and over. By having different people around or changing locations (eg moving the argument to a car, or to a restaurant) it makes the scenes more visually dynamic for filming.
I think Nikki just damaged her looks with all that surgery. I doubt she’s actually in her 60s or 70s, she just looks weathered.

Before The 90 Days is basically an online dating show where people who have even talking online with foreigners decide to meet in person for the first time. The Other Way is about established couples where the American is traveling to another country (instead of the other way in regular 90DF).
Happily Ever After and The Single Life usually feature couples / people who already starred in one of the other shows. Happily Ever After is basically a sequel where you see married couples from one of the other shows living together, and The Single Life is about the dating lives of cast members from other shows who got divorced or split up after their seasons ended.
It depends on what you’re looking for, I think.

I think Mike is worse than Gino. Jasmine might be histrionic but she has been with Gino for a long time now and seems to be genuinely enthusiastic about being with him (as baffling as that is to the rest of us).
There’s never a time that I can recall where Ximena seems to like or even tolerate Mike.
